CRAWFISH CHEESE CASSEROLE

Ingredients

• 1/3 c. butter
• 1/3 c. flour
• 3 c. milk
• 2 c. sharp American cheese, grated
• 2 lb. boiled shrimp or crawfish peeled and drained
• ½ tsp. salt
• Dash Chinese red popper
• ½ c. bread crumbs
• Garlic to taste

Directions

Melt butter; blend in flour. Add milk. Cook, stirring constantly until sauce thickens. Add 1 ½ cup cheese, shrimp or crawfish, salt and pepper. Turn into but¬tered baking dish; sprinkle top with bread crumbs mixed with remaining cheese. Bake at 400º for 20 minutes. Yield: 8 10 servings. Serve your crawfish cheese casserole
