Ingredients

  • • 1 6-oz can of crab meat, drained
  • • 2 tbsp. sherry
  • • 1 tsp. salt
  • • Dash of white pepper
  • • 1 tbsp. marjoram
  • • 2 tbsp. butter
  • • 2 tbsp. flour
  • • 1 egg yolk
  • • 1 cup light cream
  • • 6 slices white bread

Method

Step 1

Combine first 5 ingredients; set aside.

Step 2

In saucepan, melt butter; remove from heat and stir in flour.

Step 3

Beat egg yolk into cream. Stir cream into the butter-flour mixture and heat until thickened, stirring constantly.

Step 4

Mixture will be very thick, Pour sauce on crab mixture and toss.

Step 5

Using a small cookie cutter, cut rounds from each slice of bread.

Step 6

Toast rounds on one side only.

Step 7

Mound crab mixture on untoasted side of each round. Place under broiler until lightly browned.

Step 8

Serve hot.
